My bread making saga (as Vanini said :)) continues. This time I tried the honey bun recipe from happyhomebaking.
The process:

I modified the ingredients a little bit:
325 bread flour
1/2 ts salt
2 ts instant yeast
1 egg
150 warm milk
1/2 ts dough conditioner (optional)
25 g honey
60 g sugar
30g unsalted butter
Direction:
a. Mix together the flour, sugar, salt, yeast, in the mixing bowl. Add the egg yolk then start kneading - I use kitchen aid with a dough hook attachment set at speed 1. While kneading, slowly add the honey and milk. After about 10 minutes of kneading add in butter then continue kneading 'till the dough is smooth for about 30 minutes.

b. Cover the mixing bowl with a cling warp then leave it in a warm place (I put mine under a reading light like this) to proof 'till it doubled in size for about 1 hour. Or if you make this during a very cold day; preheat the oven to 350 F, turn it off, then proof the dough inside the oven.
c. Punch the air out then divide the dough into 9 portions, knead and shape each into a round ball. Place the doughs about 1 inch apart in a 9" x 9" square baking tray lightly greased with butter. Let it proof for another hour.
d. After the buns are ready to be baked, brush the dough with mixture of 1 egg yolk + 1 Tbs of milk. Then bake at 350 F for about 15 minutes, rotate the pan, then continue to bake for another 5 to 10 minutes or 'till the buns are golden brown
