Chris' Signature Chili

If you think I'm the chef of the house; you're wrong. My husband is the real chef and the one who likes to eat and make good food. I'm learning to enjoy, appreciate, and make good foods from and for him (and my little boy of course). 

I know some of you have been waiting for this. Chris finally got chance to download the recipe from his head. So here it is: A Christmas gift from our home to yours: Chris' Signature Chili Recipe.



Chris' Signature Chili

Ingredients:
- 1 pack (1/2 pound) of red/green Thai chili (chop using electric chopper)
- 2 cups of sliced red onion or shallots
- 5 of 2 inches lemongrass stalk
- 3 tablespoons shrimp paste
- 6 leaves of Kafir lime leaves
- 3 tablespoon of salt 
- 2 tbs fish sauce
- 1/2 cup of sugar (can be up to 2/3 cup if you prefer sweeter taste)
- 1 cup of cooking oil
- 2 fresh tomatoes (thinly sliced)
- 1 lime (Kafir lime is preferred if available, otherwise regular lime will also do)

Directions:
a. Heat oil in a frying pan over medium-high heat. Add the chopped shallots, fry until they turn a very light golden brown and slightly crispy (2-3 minute)
Add lemongrass, shrimp paste and stir for 1 minute
b. Mix in the chopped Thai Chili, stir fry for 1-2 minute
c. Add sea salt, fish sauce and stir for 1 minute
d. Add sliced tomatoes, sugar and lime leaves and stir fry for 1 minute
e. Done on the cooking par
f. Add lime juice and let it sit for 30 minutes or more to cool down.

Note: The taste will blend better when it sits longer

PS: You may want to cook outside (with the risk of being protested by your neighbors) otherwise your house will smells shrimp paste for days...
