Attempted to make healthier food, I tried to make a wholewheat bread using bread maker. The result: not so successful. The bread was rich but not soft as we like it to be . :(
Joined with ground pork and eggs
Mix them up, put on top of a broiler pan, cover with bacon, bake on the oven then....
The stale bread was transformed into a delicious Meatloaf. ;P
Thanks to the Pioneer Woman for the original recipe.
My version used ground pork instead of beef:
Meatloaf
Printable Recipe
Ingredients
3/4 cup Whole Milk
5 slices White Bread
1 pounds Ground Pork
3/4 cup grated Parmesan Cheese
2/3 teaspoons kosher salt
Ground Black Pepper to taste
1/4 cups Minced Parsley
3 whole Eggs Beaten
6-8 slices Thin/regular Bacon
Sauce:
3/4 cup Ketchup
1/4 cups Brown Sugar
1/2 teaspoon Dry Mustard
Tabasco to taste
Direction:
Pour milk over the bread slices. Let it to soak in for several minutes.
Place the ground beef, milk-soaked bread, parmesan, kosher salt, black pepper, and parsley in a large mixing bowl. Pour in beaten eggs.
Mix the ingredients with hand until well combined.
Preheat oven to 350 degrees.
Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!)
Lay bacon slices over the top, tucking them underneath the meatloaf.
Make the sauce: add ketchup, brown sugar, mustard, and hot sauce in a mixing bowl. Stir together.
Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.
Bake for 45 minutes, then pour another 1/3 of the sauce over the top.
Bake for another 15 minutes. Slice and serve with remaining sauce.
Enjoy!
