French Toast adapted from Orangette
Yield: 6 slices, serving 3.
Ingredients 3/4 cup whole milk
3 large eggs
1 Tbs sugar
1 tsp pure vanilla extract
¼ tsp salt
2 Tb oil and 1Tb butter for cooking
6 slices French bread about ¾ inch thick
maple syrup or honey, for serving
Direction:
Whisk together the first five ingredients in a wide bowl.
Heat a large skillet over medium heat
Add the bread slices to the egg mixture in the bowl, allowing them to rest for a minute or so on each side. They should feel heavy and thoroughly saturated, but not falling apart.
Add oil to the heated skillet, when the oil is hot, lower the heat, add butter then place the slices of bread in the skillet.
Cook until the underside of each slice is golden brown about 2 minutes or so.
Turn the bread over, and cook until the second side is golden.
Remove the bread from the skillet to a plate lined with a paper towel, allow to rest for 1-2 minute, then serve with maple syrup or honey.
